Banana Protein Muffins

Ingredients:

  • 2 medium mashed/pureed bananas
  • 2 eggs
  • ¼ cup olive oil
  • ¾ cup Fairlife skim milk
  • ½ cup brown granular Swerve
  • 1 tsp vanilla extract
  • 1 ¾  cups Kodiak Cakes Buttermilk Power Cakes
  • 75g protein powder (vanilla, cake batter, or snickerdoodle are all great choices!) 
  • 1 tsp baking powder
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • *optional - ½ cup Hershey’s Cinnamon Chips

 

Instructions:

  • Preheat the oven to 350 degrees F.
  • Line a regular sized muffin tin with liners.  (parchment paper liners are our favorite!)
  • Puree bananas, then combine in a large bowl with all other ingredients.  Mix until thoroughly combined. 
  • *Optional - fold the chocolate chips into the batter
  • Divide batter evenly between muffin cups sprinkle the top of the muffins with granular Swerve.
  • Bake for 20 - 25 minutes or until golden brown on top.
