Banana Protein Muffins

Ingredients:
- 2 medium mashed/pureed bananas
- 2 eggs
- ¼ cup olive oil
- ¾ cup Fairlife skim milk
- ½ cup brown granular Swerve
- 1 tsp vanilla extract
- 1 ¾ cups Kodiak Cakes Buttermilk Power Cakes
- 75g protein powder (vanilla, cake batter, or snickerdoodle are all great choices!)
- 1 tsp baking powder
- ½ teaspoon cinnamon
- ¼ teaspoon nutmeg
- *optional - ½ cup Hershey’s Cinnamon Chips
Instructions:
- Preheat the oven to 350 degrees F.
- Line a regular sized muffin tin with liners. (parchment paper liners are our favorite!)
- Puree bananas, then combine in a large bowl with all other ingredients. Mix until thoroughly combined.
- *Optional - fold the chocolate chips into the batter
- Divide batter evenly between muffin cups sprinkle the top of the muffins with granular Swerve.
- Bake for 20 - 25 minutes or until golden brown on top.
